Pasta alla Bolognese

Growing up I never loved cooking but I always enjoyed going out to dinner and spend some time in some nice restaurants. Living in Italy, I have been extremely fortunate with respect to food. Italians love their food and take pride in making the best of the best. One of my favorite dishes although very simple always hits the spot. The Restaurant “Undici”, an amazing place, makes possibly the best “pasta alla Bolognese” I have ever tasted. They make the pasta fresh in the restaurant, layering it all around a big bowl. The sauce is the key ingredient though, “Undici” uses a fresh mix of lamb, pork, and beef to make their sauce. They cook these ingredients slowing over a low flame to really get the flavor. Then they dice up tomatoes, some peppers, and a few onions to add some extra flavor. When the sauce has been brought to a simmer, they add the meat and finish cooking it in the sauce, and stirring in a little bit of cream to thicken the sauce. Then the masterpiece comes together in one big bowl of steaming perfection. “Undici” is a very simple but amazing Italian restaurant and this dish is by far my favorite.
